  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup breadcrumbs (panko or Italian-style)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup melted butter
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon paprika
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). In a large bowl, toss the cleaned shrimp with olive oil, salt, and pepper.
  2. In another bowl, mix together the breadcrumbs, Parmesan cheese, melted butter, parsley, green onions, garlic, lemon juice, paprika, salt, and pepper. Stir until well combined.
  3. Spread the shrimp evenly in a greased baking dish. Scoop the breadcrumb mixture over the shrimp, packing it in lightly.
  4. Place the dish in the oven and bake for about 25-30 minutes, until the topping is golden brown and the shrimp is cooked through.
  5. Let it rest for a few minutes, then garnish with fresh parsley and serve with lemon wedges.

Notes

For variations, consider swapping shrimp for scallops, using different cheeses, or adding cooked spinach or artichokes.
