Crispy and flavorful salmon bites coated in panko breadcrumbs and tossed in a sweet and spicy Bang Bang sauce.

Ingredients

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat the oven to 425°F (220°C) or air fryer to 400°F (200°C).
  2. In a bowl, season the salmon cubes with garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
  3. Spread the panko breadcrumbs on a plate and coat each salmon cube in breadcrumbs, pressing to adhere.
  4. Place the salmon bites on a baking sheet lined with parchment paper or in the air fryer basket. If using the oven, drizzle with olive oil or spray lightly.
  5. Bake for 12-15 minutes in the oven or air-fry for about 8-10 minutes until golden brown and cooked through.
  6. While the salmon cooks, mix together the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice in a small bowl for your Bang Bang sauce.
  7. Assemble your bowls: start with a base of jasmine rice, layer on the shredded purple cabbage, sliced avocado, and shredded carrots. Top generously with crispy salmon bites and drizzle with Bang Bang sauce. Finish with sliced green onions, fresh cilantro, and sesame seeds.

Notes

For extra crunch, ensure your breadcrumbs are fresh and consider adjusting sriracha levels to personal spice preference. Serve with lime wedges for added zest.
