- ½ cup salsa
- 1 cup refried beans
- 1 ½ cups shredded cheddar cheese (or Mexican blend)
- 6 large flour tortillas (burrito-size)
- 2 tbsp vegetable oil (for brushing/frying)
Instructions
- In a large skillet over medium heat, cook the ground beef and onions until browned.
- Drain excess grease and stir in garlic, taco seasoning, and salsa. Simmer for 3-4 minutes.
- Assemble the chimichangas by spreading refried beans on the tortillas, adding beef mixture and cheese, then rolling tightly.
- For baking, preheat oven to 400°F (200°C), brush chimichangas with oil and bake for 18-20 minutes, flipping halfway through.
- For frying, heat oil in a skillet and cook chimichangas seam-side down for 2-3 minutes per side until golden.
- Let rest before serving with desired toppings.
