  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 packet (1 oz) taco seasoning (or homemade)
  • ½ cup salsa
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese (or Mexican blend)
  • 6 large flour tortillas (burrito-size)
  • 2 tbsp vegetable oil (for brushing/frying)

Instructions

  1. In a large skillet over medium heat, cook the ground beef and onions until browned.
  2. Drain excess grease and stir in garlic, taco seasoning, and salsa. Simmer for 3-4 minutes.
  3. Assemble the chimichangas by spreading refried beans on the tortillas, adding beef mixture and cheese, then rolling tightly.
  4. For baking, preheat oven to 400°F (200°C), brush chimichangas with oil and bake for 18-20 minutes, flipping halfway through.
  5. For frying, heat oil in a skillet and cook chimichangas seam-side down for 2-3 minutes per side until golden.
