Ingredients

  • 1 small head green cabbage, shredded
  • 2 large carrots, grated
  • 1 red bell pepper, thinly sliced
  • 1/2 cup red onion, thinly sliced
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: chopped cilantro or parsley for garnish

Instructions

  1. In a large bowl, combine the shredded cabbage, grated carrots, sliced red bell pepper, and red onion, tossing them to distribute evenly.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and honey until the mixture is creamy and smooth.
  3. Pour the dressing over your prepared vegetables and toss until everything is well-coated.
  4. Season with salt and pepper to taste, adjusting based on your preferences.
  5. If desired, garnish the coleslaw with freshly chopped cilantro or parsley.
