- 8 oz penne pasta
- 1 lb tender chicken breast, sliced
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup bell peppers, sliced
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, warm the olive oil over medium heat until it shimmers.
- Add the sliced chicken and sprinkle with Cajun seasoning. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, sliced bell peppers, and minced garlic. Sauté for about 3-4 minutes, until the vegetables are tender and fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer for a few minutes, thickening slightly.
- Add the drained pasta and cooked chicken back into the skillet, stirring well to coat. Season with salt and pepper to taste, and heat through for an additional 2-3 minutes.
- Serve hot, topped with freshly grated Parmesan cheese and a sprinkle of fresh parsley.
Notes
For a lighter dish, substitute half-and-half for the heavy cream. Adjust Cajun seasoning to taste for desired spiciness.
