Ingredients

  • 8 oz penne pasta
  • 1 lb tender chicken breast, sliced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, warm the olive oil over medium heat until it shimmers.
  3. Add the sliced chicken and sprinkle with Cajun seasoning. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion, sliced bell peppers, and minced garlic. Sauté for about 3-4 minutes, until the vegetables are tender and fragrant.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer for a few minutes, thickening slightly.
  6. Add the drained pasta and cooked chicken back into the skillet, stirring well to coat. Season with salt and pepper to taste, and heat through for an additional 2-3 minutes.
  7. Serve hot, topped with freshly grated Parmesan cheese and a sprinkle of fresh parsley.

Notes

For a lighter dish, substitute half-and-half for the heavy cream. Adjust Cajun seasoning to taste for desired spiciness.
