Delightful cheesecake bars with a creamy filling, fresh apples, and rich caramel, all atop a buttery graham cracker crust.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced apples
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a medium mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Stir until the mixture resembles wet sand, then pack it firmly into the bottom of the prepared baking dish.
  3. In a large bowl, beat the softened cream cheese until it’s smooth and creamy. Gradually add 1 cup sugar and the vanilla, mixing until well combined.
  4. Add the eggs one at a time, beating just until incorporated.
  5. Gently fold in the diced apples, then pour the mixture over the crust in your baking dish.
  6. Drizzle your caramel sauce on top, swirling through the cheesecake layer.
  7. Bake for 35-40 minutes until the edges are set but the center is still slightly wobbly.
  8. Allow the bars to cool completely before refrigerating for at least 2 hours to firm up.
  9. Cut into bars and serve chilled, drizzled with more caramel if desired.

Notes

For better slicing, use a sharp knife and clean the blade in between cuts. These bars are best enjoyed chilled.
