  • 1 onion, chopped

  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice or pasta

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the onions, garlic, and bell pepper, sauté for about 5 minutes until soft.
  4. Stir in diced tomatoes, mixed vegetables, chili powder, salt, and pepper, cooking for an additional 2-3 minutes.
  5. Fold in cooked rice or pasta until well combined.
  6. Transfer to a greased casserole dish, spreading evenly.
  7. Top generously with shredded cheese.
  8. Bake for 25-30 minutes until cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.
