- 1 cup cooked rice or pasta
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the onions, garlic, and bell pepper, sauté for about 5 minutes until soft.
- Stir in diced tomatoes, mixed vegetables, chili powder, salt, and pepper, cooking for an additional 2-3 minutes.
- Fold in cooked rice or pasta until well combined.
- Transfer to a greased casserole dish, spreading evenly.
- Top generously with shredded cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
