A delicious, simple breakfast recipe combining melted cheese and a perfectly cooked egg on crispy toast. You can add fresh herbs or spice it up with optional cayenne for an extra kick. Ideal for a quick morning meal or a comforting snack.

Ingredients

2 slices of bread

1 large egg

½ cup (2 oz) grated cheese (cheddar, pepper jack, or gruyere)

1 teaspoon finely chopped fresh herbs (thyme or rosemary)

Salt and black pepper, to taste

Pinch of cayenne pepper (optional)

Instructions

1. (Oven) Lightly toast the bread.

2. Preheat the oven to 400°F (200°C).

3. In a small bowl, beat the egg and mix in the cheese and fresh herbs. Season with salt and pepper.

4. Spread the mixture over the bread, all the way to the crusts. Sprinkle with cayenne if desired.

5. Bake for 10 to 12 minutes until puffed, bubbly, and starting to brown.

6. (Air Fryer) Preheat the air fryer to 340°F (170°C).

7. Prepare the egg mixture and spread it over the untoasted bread slices.

8. Place the slices in the air fryer basket.

9. Air fry for 8 to 10 minutes, until browned, toasted, and cooked through.

Notes

**Variations:**

Faux Monsieur: Use Gruyere cheese. Spread toasted bread with Dijon mustard, add veggie slices, and bake as directed.

Tomato Toast: Use mozzarella and parmesan. Bake with Italian seasoning, then layer with tomato slices, oregano, salt, pepper, and a drizzle of balsamic glaze.

Honey Apple Walnut: After baking, top the cheesy toast with crisp apple slices, honey, and toasted cinnamon walnuts.
