- 4 chicken breasts
- 1 cup mushrooms, diced
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 cup shredded cheese (e.g., mozzarella or cheddar)
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced mushrooms and garlic, stirring until the mushrooms soften and the garlic becomes fragrant. Season with salt, pepper, and Italian seasoning, if using.
- Carefully cut a pocket in each chicken breast, and stuff them generously with the mushroom mixture, packing it in nicely.
- In the same skillet, drizzle a bit of olive oil and sear each stuffed chicken breast for about 3-4 minutes on each side until golden brown.
- Once seared, place the chicken in a baking dish. Top each piece with shredded cheese and the remaining butter.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is thoroughly cooked and the cheese is bubbly and slightly golden.

Notes
For a twist, substitute different cheeses or add a spoonful of cream cheese to the filling. Store leftovers in an airtight container for up to three days, or freeze for up to three months.
