- 8 oz spaghetti
- 4 cloves fresh garlic, minced
- ½ cup grated Parmesan cheese (plus extra for topping)
- 1 cup shredded mozzarella cheese
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a rolling boil. Add spaghetti and cook until al dente, about 8-10 minutes. Drain, reserving ½ cup pasta water.
- In a skillet over medium heat, combine butter and olive oil. When oil shimmers, add minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
- Lower heat, stir in Parmesan and mozzarella cheese. Add reserved pasta water gradually until a creamy sauce forms.
- Add cooked spaghetti to the skillet, tossing to coat. Adjust seasoning with salt and pepper.
- Plate the pasta, garnish with fresh parsley and extra grated Parmesan.
Notes
To reheat leftovers, warm gently in a skillet with a splash of water or milk.
