A comforting and rich spaghetti dish coated in a creamy garlic and cheese sauce, perfect for any occasion.

Ingredients

  • 8 oz spaghetti
  • 4 cloves fresh garlic, minced
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add spaghetti and cook until al dente, about 8-10 minutes. Drain, reserving ½ cup pasta water.
  2. In a skillet over medium heat, combine butter and olive oil. When oil shimmers, add minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
  3. Lower heat, stir in Parmesan and mozzarella cheese. Add reserved pasta water gradually until a creamy sauce forms.
  4. Add cooked spaghetti to the skillet, tossing to coat. Adjust seasoning with salt and pepper.
  5. Plate the pasta, garnish with fresh parsley and extra grated Parmesan.

Notes

To reheat leftovers, warm gently in a skillet with a splash of water or milk.
