  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup queso cheese
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced chicken and cook until browned, about 5-7 minutes.
  3. Stir in the diced onion and bell pepper, and cook until tender, about 3-4 minutes.
  4. Add the rice and fajita seasoning, stirring until the rice is well-coated.
  5. Pour in the chicken broth and bring to a rolling boil.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
  7. Stir in the queso cheese until melted and creamy.
  8. Season with salt and pepper to taste, and serve warm.

Notes

For a twist, consider using brown rice or swapping in ground turkey for a leaner option. Garnish with cilantro or green onions.
