- 1 cup rice

- 1 bell pepper, diced

- 1 tablespoon fajita seasoning

Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add the diced chicken and cook until browned, about 5-7 minutes.
- Stir in the diced onion and bell pepper, and cook until tender, about 3-4 minutes.
- Add the rice and fajita seasoning, stirring until the rice is well-coated.
- Pour in the chicken broth and bring to a rolling boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
- Stir in the queso cheese until melted and creamy.
- Season with salt and pepper to taste, and serve warm.
Notes
For a twist, consider using brown rice or swapping in ground turkey for a leaner option. Garnish with cilantro or green onions.
