Ingredients
Scale
- 8 oz high-quality semi-sweet or dark chocolate, chopped
- 1 cup heavy cream
- 1 cup cherry puree
- 2 tablespoons cherry liqueur (optional)
- Cocoa powder or chopped nuts (for rolling)
Instructions
- In a medium saucepan over low heat, warm the heavy cream until it begins to steam, then remove from heat.
- Gradually add the chopped chocolate to the cream, stirring until melted and smooth.
- Stir in the cherry puree and cherry liqueur until well combined.
- Let the mixture cool for about 30 minutes, then refrigerate for at least 2 hours until firm.
- Once firm, use a cookie scoop to portion the mixture and roll each portion into smooth balls.
- Roll the truffles in cocoa powder or chopped nuts to coat and place on a parchment-lined baking sheet.
- For extra flavor, drizzle melted chocolate over the truffles or sprinkle with sea salt before serving.
Notes
For best results, always use high-quality chocolate. You can substitute cherry puree with fresh blended cherries.
