Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter with both sugars until light and fluffy.
  3. Beat in the eggs, one at a time, mixing well after each addition. Add the mint and vanilla extracts.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips until evenly distributed.
  7. Use a cookie scoop to portion out dough onto prepared sheets, leaving space for spreading.
  8. Bake for 10-12 minutes until edges are set and centers are slightly soft.
  9. Allow to cool on the sheets for a few minutes before transferring to a wire rack to cool completely.
