Ingredients

½ cup unsalted butter, melted

1 cup light brown sugar, packed

1 large egg

¼ cup honey

1 teaspoon vanilla extract

1 cup all-purpose flour

½ teaspoon salt

1 teaspoon ground cinnamon, divided

3 tablespoons granulated sugar (for topping)

Instructions

1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

2. In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the egg, honey, and vanilla extract, and whisk until everything is well combined.

3. Gently stir in the flour, salt, and ½ teaspoon of cinnamon until just combined. Do not overmix.

4. Pour the batter into the prepared pan and spread it evenly. In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of cinnamon and sprinkle it evenly over the top of the batter.

5. Bake for 22–25 minutes, or until a toothpick inserted into the center comes out clean.

6. Allow the blondies to cool completely in the pan before cutting into squares.

Notes

To make cutting easier, chill the blondies briefly after they’ve cooled to room temperature.

Try adding white chocolate chips or chopped pecans for an extra twist.

Store leftovers in an airtight container at room temperature for up to 3 days.
