A warm and inviting banana bread with a delightful cinnamon swirl, perfect for breakfast or as a sweet treat.

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth and creamy.
  3. Incorporate the melted butter into the mashed bananas.
  4. Sprinkle in the baking soda and salt, stirring until well combined.
  5. Add sugar, then the beaten egg and vanilla extract, mixing thoroughly.
  6. Gently fold in the flour until just incorporated.
  7. In a small bowl, combine ground cinnamon and brown sugar.
  8. Pour half of the batter into the prepared loaf pan.
  9. Sprinkle half of the cinnamon-sugar mixture on top of the batter.
  10. Pour the remaining batter on top and finish with the rest of the cinnamon-sugar mixture.
  11. Swirl through the batter gently with a knife.
  12. Bake for 60-65 minutes, or until a toothpick inserted comes out clean.
  13. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
