Ingredients

  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen cranberries
  • 1/4 cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Mix in flour, rolled oats, baking powder, and salt until combined; it should resemble damp sand.
  4. Press two-thirds of the mixture into the bottom of the greased baking pan to form a crust.
  5. In another bowl, mix cranberries, orange juice, orange zest, and vanilla extract until cranberries are coated; spread this over the crust.
  6. Crumble the remaining oat mixture over the cranberry layer.
  7. Bake in the preheated oven for 30-35 minutes until lightly golden.
  8. Allow bars to cool completely before cutting into squares.
  9. Whisk together powdered sugar and milk, then drizzle over cooled bars.

Notes

Using fresh cranberries elevates the tartness; frozen can be used if mixed while still frozen. Customize with nuts or different fruits.
