Ingredients

  • 1 pound black-eyed peas
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 2 tablespoons olive oil or butter
  • Optional: 1 cup diced ham or bacon
  • Optional: Chopped green onions for garnish

Instructions

  1. Rinse the black-eyed peas under cold water and soak them for at least 4 hours or overnight. Drain and set aside.
  2. In the Instant Pot or a large pot on the stovetop, heat the olive oil or butter over medium heat.
  3. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Stir in the minced garlic and sauté for 1 minute, until fragrant.
  4. If using, add the diced ham or bacon and cook until browned.
  5. Stir in the soaked black-eyed peas, broth, salt, pepper, smoked paprika, and bay leaf. Mix well.
  6. If using an Instant Pot, secure the lid, set to manual mode, and cook on high pressure for 25 minutes. For stovetop, bring to a simmer, cover, and cook for 1 to 1.5 hours, until peas are tender.
  7. Once cooked, remove the bay leaf, taste for seasoning, and adjust salt and pepper as needed.
  8. Serve warm, garnished with chopped green onions if desired.

Notes

Soaking the peas is crucial for tenderness. You can substitute black-eyed peas with cannellini or pinto beans if necessary.
