- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season both sides of the chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Cook the chicken for 5-6 minutes on each side until golden and crispy. Set aside to rest.
- Add minced garlic to the skillet and sauté for about 30 seconds.
- Pour in the cream, stirring continuously until bubbling and thickened.
- Add Italian seasoning and parmesan, stirring until smooth. If using, add spinach and let it wilt for 2-3 minutes.
- Return the chicken to the pan and spoon the sauce over it. Simmer for one more minute before serving hot.
Notes
For optimal taste, use fresh garlic and quality parmesan cheese.
