Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Place the chicken breasts in the crockpot.
  2. In a bowl, mix together the honey, soy sauce, ketchup, minced garlic, and ginger until well combined.
  3. Pour the mixture over the chicken, evenly coating each piece.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, carefully remove the chicken and shred it using two forks.
  6. Return the shredded chicken to the crockpot, stirring to coat it well with the sauce.
  7. Serve warm, garnished with sliced green onions.

Notes

Serve over rice or alongside steamed vegetables. For a kick, add sriracha to the sauce.
