This refreshing Cucumber Tomato Mozzarella Salad is tossed in a zesty herb marinade, perfect as a light lunch or colorful side dish that’s bursting with Mediterranean flavor.

Ingredients

Marinade:

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon dried oregano

1 tablespoon dried basil

Pinch salt

Pinch pepper

Salad:

1 cucumber, peeled, fork-scored, thinly sliced, and diced

1½ cups cherry tomatoes, cut into quarters

8 oz fresh mozzarella

½ large red onion, chopped into small pieces

Optional: fresh basil leaves

Instructions

1. In a small bowl, mix together olive oil, balsamic vinegar, dried oregano, dried basil, and a dash of salt and pepper. Stir until well combined. Set aside.

2. Peel a washed cucumber. Use a fork to scrape the skin to create a textured surface. Slice the cucumber thinly and then dice it into small pieces. Place the diced cucumber in a medium-sized bowl.

3. Quarter the washed cherry tomatoes and add them to the bowl with the cucumber.

4. Thinly slice and dice the red onion and add it to the bowl. (This step is optional).

5. Slice mozzarella into bite-sized pieces (or use pearl-sized mozzarella balls) and add to the bowl.

6. Pour the prepared marinade over the vegetables and cheese. Mix everything well to ensure all ingredients are evenly coated.

7. Allow the salad to sit for 10 minutes before serving to let the flavors meld.

Notes

For added freshness, garnish with whole or chopped fresh basil leaves.

Use heirloom cherry tomatoes for a more colorful presentation.

Letting the salad sit allows the dried herbs to rehydrate and infuse the dish with flavor.
