A hearty and comforting stew made with ground beef, fresh vegetables, and rich broth that’s perfect for chilly evenings.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat until it shimmers.
  2. Add the chopped onion and garlic, sautéing until they become translucent, about 2 to 3 minutes.
  3. Toss in the ground beef, breaking it apart with a spatula, and cook until it’s browned.
  4. Stir in the diced carrots, potatoes, diced tomatoes, beef broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 30-40 minutes until vegetables are tender.
  6. Taste and adjust seasonings as desired before serving.

Notes

Garnish with fresh parsley and serve with crusty bread or dinner rolls. Leftovers store well in the fridge for 3-4 days or can be frozen for up to 3 months.
