- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat until it shimmers.
- Add the chopped onion and garlic, sautéing until they become translucent, about 2 to 3 minutes.
- Toss in the ground beef, breaking it apart with a spatula, and cook until it’s browned.
- Stir in the diced carrots, potatoes, diced tomatoes, beef broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 30-40 minutes until vegetables are tender.
- Taste and adjust seasonings as desired before serving.
Notes
Garnish with fresh parsley and serve with crusty bread or dinner rolls. Leftovers store well in the fridge for 3-4 days or can be frozen for up to 3 months.
