  • 1 pound ground beef or turkey
  • 1 cup bell peppers, diced (any color)
  • 1 medium onion, chopped
  • 2 cups marinara sauce (low-sugar)
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: 1 cup sliced mushrooms or olives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned for 5-7 minutes, breaking it apart with a wooden spoon.
  3. Add the onions and bell peppers to the pan and cook for another 3-4 minutes until softened.
  4. Season with salt, pepper, and Italian seasoning. Pour in the marinara sauce and simmer for about 5 minutes.
  5. Spread the meat and vegetable mixture evenly in a greased 9×13 inch baking dish. Sprinkle 1 cup of mozzarella cheese on top.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly. Broil for 2-3 minutes for a crispy top, if desired.
