  • 8 oz (225g) noodles (spaghetti, udon, or rice noodles)
  • 1 lb (450g) ground beef
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • ¼ cup soy sauce (or tamari for gluten-free)
  • ¼ cup brown sugar
  • ½ cup beef broth
  • 1 tbsp hoisin sauce
  • 1 tbsp cornstarch (mixed with 2 tbsp water)
  • ½ tsp red pepper flakes (optional)
  • ½ cup green onions, chopped
  • 1 tbsp sesame seeds (for garnish)

Instructions

  1. Cook the noodles according to package instructions, then drain and set aside.
  2. In a large pan, heat the vegetable oil over medium-high heat. Add the ground beef, breaking it apart, and cook until browned. Drain any excess fat.
  3. Add the minced garlic and ginger to the pan, sauté for about 1 minute until fragrant.
  4. In a mixing bowl, whisk together the soy sauce, brown sugar, beef broth, hoisin sauce, and red pepper flakes (if using). Pour into the beef pan and stir to combine.
  5. Add the cornstarch slurry to the pan and stir until the mixture thickens and becomes glossy, about 1-2 minutes.
  6. Add the cooked noodles to the pan and toss gently until well-coated with the sauce.
  7. Garnish with chopped green onions and sesame seeds before serving.

Notes

For a lighter meal, swap ground beef for ground turkey or chicken. For a vegan option, use plant-based meat or firm tofu.
