  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon salt
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, whisk together the flour, baking soda, and baking powder until well combined.
  3. In a large mixing bowl, cream the softened butter with the sugar until light and fluffy (about 3-5 minutes).
  4. Add in the egg, vanilla extract, and almond extract, mixing until smooth.
  5. Gradually blend the dry ingredients into the creamed mixture until just combined.
  6. Scoop out portions of dough and roll them into balls, placing them on ungreased cookie sheets.
  7. Flatten each ball using the bottom of a glass and sprinkle the tops with sugar if desired.
  8. Bake for 8 to 10 minutes, watching closely for golden edges.
  9. Transfer to wire racks to cool completely.
