Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash and cut the baby potatoes in half, then set aside.
  2. Minutely mince the garlic cloves for maximum flavor.
  3. Drizzle the chicken breasts with olive oil, season with Italian seasoning, salt, black pepper, and red pepper flakes.
  4. Layer the halved potatoes in the bottom of the crockpot.
  5. Place the seasoned chicken breasts on top of the potatoes.
  6. Pour the chicken broth gently over the chicken and potatoes.
  7. Sprinkle the minced garlic evenly over the chicken and cover with grated Parmesan cheese.
  8. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  9. Once cooked, remove chicken and potatoes from the crockpot, serving with remaining sauce and garnish with parsley.

Notes

Using high-quality broth and freshly grated Parmesan enhances the flavor significantly. Consider adding vegetables like mushrooms or spinach for a nutritional boost.
