- 1 lb ground chicken
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or Italian-seasoned)
- 2 large eggs
- 1 medium onion, diced
- 2 tbsp soy sauce (low-sodium recommended)
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- In a skillet over medium heat, sauté the diced onions until they are soft and translucent, about 5 minutes.
- In a large bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, beaten eggs, soy sauce, salt, pepper, and half of the grated Parmesan. Mix thoroughly.
- Shape the mixture into a loaf form and place it in the prepared baking dish.
- Sprinkle the remaining Parmesan cheese over the top.
- Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C). Let it rest for 10 minutes before slicing.
Notes
Consider adding finely chopped vegetables or herbs for extra flavor and nutrition. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
