- 2 medium sweet potatoes
- 1/2 cup crumbled feta cheese
- 2 tablespoons honey
- 2 tablespoons olive oil

Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into rounds about 1/4 inch thick.
- On a baking sheet, toss the sweet potato rounds with olive oil, salt, and pepper until they are well-coated.
- Bake for 25-30 minutes, or until tender and slightly golden, keeping an eye on them to ensure they don’t overcook.
- Remove from the oven and drizzle with honey, followed by a sprinkle of crumbled feta cheese.
- Return to the oven for an additional 5-7 minutes, until the feta is slightly melted.
- Garnish with fresh herbs if desired, and serve warm.
Notes
For a vegan alternative, substitute feta with nut-based cheese and honey with maple syrup. Store leftovers in an airtight container in the refrigerator for up to 3 days.
