Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds about 1/4 inch thick.
  3. On a baking sheet, toss the sweet potato rounds with olive oil, salt, and pepper until they are well-coated.
  4. Bake for 25-30 minutes, or until tender and slightly golden, keeping an eye on them to ensure they don’t overcook.
  5. Remove from the oven and drizzle with honey, followed by a sprinkle of crumbled feta cheese.
