- 2 cups cooked quinoa
- 1 lb chicken breast, grilled and sliced
- 1 cucumber, diced
- 2 cups cherry tomatoes, halved
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled (optional)
- 2 cups mixed greens
- For the tzatziki sauce:
- 1 cup Greek yogurt
- 1 cucumber, grated
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper. Stir until well mixed and refrigerate.
- In a large bowl, layer cooked quinoa as the base.
- Add grilled chicken slices on top of quinoa.
- Layer with diced cucumber, halved cherry tomatoes, sliced red onion, diced bell pepper, olives, and mixed greens.
- Drizzle tzatziki sauce generously over the layered ingredients before serving.
- Sprinkle crumbled feta cheese on top, if desired.
Notes
Customize with different proteins or swap quinoa for brown rice or couscous. Keep fresh toppings separate until serving for the best flavor.
