- 2 Chicken breasts
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- 2 tablespoons Lemon juice
- Salt, to taste
- Pepper, to taste
- 1 Cucumber, diced
- 1 Tomato, diced
- 1 Red onion, thinly sliced
- 1/2 cup Feta cheese, crumbled
- 1/3 cup Kalamata olives
- 1 cup Cooked quinoa or rice
- For the tzatziki sauce:
- 1 cup Yogurt
- 1/2 Cucumber, grated
- 1 clove Garlic, minced
- 2 tablespoons Fresh dill, chopped
- 2 tablespoons Lemon juice
Instructions
- Marinate the chicken breasts in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
- Preheat the grill or oven. Grill or bake the chicken until fully cooked, about 6-8 minutes on each side.
- Make the tzatziki sauce by mixing yogurt, grated cucumber, garlic, dill, and lemon juice in a bowl.
- Slice the cooked chicken into strips.
- Assemble bowls with cooked quinoa or rice as the base, and top with cucumber, tomato, red onion, feta cheese, and olives.
- Drizzle tzatziki sauce on top before serving.
Notes
For added flavor, marinate chicken overnight. Adjust garlic and lemon in the tzatziki to your taste.
