Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 tablespoons Lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 1 Cucumber, diced
  • 1 Tomato, diced
  • 1 Red onion, thinly sliced
  • 1/2 cup Feta cheese, crumbled
  • 1/3 cup Kalamata olives
  • 1 cup Cooked quinoa or rice
  • For the tzatziki sauce:
  • 1 cup Yogurt
  • 1/2 Cucumber, grated
  • 1 clove Garlic, minced
  • 2 tablespoons Fresh dill, chopped
  • 2 tablespoons Lemon juice

Instructions

  1. Marinate the chicken breasts in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Preheat the grill or oven. Grill or bake the chicken until fully cooked, about 6-8 minutes on each side.
  3. Make the tzatziki sauce by mixing yogurt, grated cucumber, garlic, dill, and lemon juice in a bowl.
  4. Slice the cooked chicken into strips.
  5. Assemble bowls with cooked quinoa or rice as the base, and top with cucumber, tomato, red onion, feta cheese, and olives.
  6. Drizzle tzatziki sauce on top before serving.

Notes

For added flavor, marinate chicken overnight. Adjust garlic and lemon in the tzatziki to your taste.
