Ingredients

  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 Cucumber, chopped
  • 2 Tomatoes, chopped
  • 1/2 Red onion, chopped
  • 1/2 cup Feta cheese, crumbled
  • 1/2 cup Kalamata olives
  • 1 cup Quinoa or rice
  • 1 cup Yogurt (for tzatziki)
  • 1/2 Cucumber, grated (for tzatziki)
  • 1 clove Garlic, minced (for tzatziki)
  • 1 tablespoon Fresh dill (for tzatziki)
  • 1 tablespoon Lemon juice (for tzatziki)

Instructions

  1. Marinate the chicken breasts in a mixture of olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
  2. Cook the marinated chicken on a grill or in the oven until it reaches an internal temperature of 165°F (74°C).
  3. Prepare quinoa or rice according to package instructions.
  4. Chop the cucumber, tomatoes, and red onion.
  5. Make the tzatziki by mixing yogurt, grated cucumber, minced garlic, dill, and lemon juice until well combined.
  6. Assemble the bowls with a base of quinoa or rice, topped with sliced chicken, fresh veggies, feta cheese, and kalamata olives.
  7. Drizzle tzatziki sauce over the assembled bowls before serving.

Notes

For best results, let the tzatziki sit for at least 30 minutes before serving. Use a meat thermometer to avoid overcooking the chicken.
