- 1/3 cup soy sauce
- 1/4 cup extra virgin olive oil (or avocado oil)
- 2 tablespoons minced garlic
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon lemon zest
- 2 tablespoons ketchup
- 1/4 cup apple cider vinegar
- Pinch of kosher salt
- Pinch of ground black pepper
- 2 racks of baby back ribs (approximately 3–4 lbs each)
- 1 1/4 tablespoons kosher salt (more if desired)
- 2 1/2 tablespoons smoked paprika
- 2 1/2 tablespoons lemon pepper
- 1/2 teaspoon cayenne pepper (optional)
- 1 tablespoon smoked garlic powder
- 1/2 tablespoon onion powder
- 1/2 tablespoon ground black pepper
- 1 cup of your favorite BBQ sauce
Instructions
- Make Marinade: In a medium bowl, whisk together the marinade ingredients until well blended and set aside.
- Prep Ribs + Marinate: Pat the ribs dry, remove the membrane for tenderness, marinate in a 9×13 pan for 30-60 minutes.
- Prep Grill: Clean and grease the grill grates. Preheat to 500°F.
- Make Dry Rub: Mix kosher salt, smoked paprika, lemon pepper, cayenne pepper, smoked garlic powder, onion powder, and ground black pepper in a small bowl.
- Season Ribs: Remove ribs from marinade, let excess drip off, and coat with dry rub.
- Grill Ribs: Place ribs meat-side down and reduce heat to 300°F, cooking for 30 minutes before flipping.
- Cook Until Done: Continue cooking until internal temperature reaches 190-203°F.
- BBQ Sauce: Brush BBQ sauce on ribs 5 degrees before they’re done and close the grill lid.
- Rest Ribs: Remove ribs, cover with foil, and let rest for 30-60 minutes.
- Serve: Uncover and serve the ribs to guests.
Notes
For best flavor, marinate for up to 24 hours. Remove the membrane from the ribs for enhanced tenderness.
