Deliciously marinated and perfectly grilled ribs that are tender and flavorful, perfect for summer gatherings.

Ingredients

  • 1/3 cup soy sauce
  • 1/4 cup extra virgin olive oil (or avocado oil)
  • 2 tablespoons minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon lemon zest
  • 2 tablespoons ketchup
  • 1/4 cup apple cider vinegar
  • Pinch of kosher salt
  • Pinch of ground black pepper
  • 2 racks of baby back ribs (approximately 34 lbs each)
  • 1 1/4 tablespoons kosher salt (more if desired)
  • 2 1/2 tablespoons smoked paprika
  • 2 1/2 tablespoons lemon pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 tablespoon smoked garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon ground black pepper
  • 1 cup of your favorite BBQ sauce

Instructions

  1. Make Marinade: In a medium bowl, whisk together the marinade ingredients until well blended and set aside.
  2. Prep Ribs + Marinate: Pat the ribs dry, remove the membrane for tenderness, marinate in a 9×13 pan for 30-60 minutes.
  3. Prep Grill: Clean and grease the grill grates. Preheat to 500°F.
  4. Make Dry Rub: Mix kosher salt, smoked paprika, lemon pepper, cayenne pepper, smoked garlic powder, onion powder, and ground black pepper in a small bowl.
  5. Season Ribs: Remove ribs from marinade, let excess drip off, and coat with dry rub.
  6. Grill Ribs: Place ribs meat-side down and reduce heat to 300°F, cooking for 30 minutes before flipping.
  7. Cook Until Done: Continue cooking until internal temperature reaches 190-203°F.
  8. BBQ Sauce: Brush BBQ sauce on ribs 5 degrees before they’re done and close the grill lid.
  9. Rest Ribs: Remove ribs, cover with foil, and let rest for 30-60 minutes.
  10. Serve: Uncover and serve the ribs to guests.

Notes

For best flavor, marinate for up to 24 hours. Remove the membrane from the ribs for enhanced tenderness.
