Deliciously soft and chewy oatmeal cookies that combine the flavors of carrot cake with wholesome ingredients.

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins or currants (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, grated carrots, honey (or maple syrup), melted coconut oil, and vanilla extract until well blended.
  3. In a separate bowl, whisk together the baking soda, cinnamon, nutmeg, and salt.
  4. Gradually incorporate the dry ingredients into the wet mixture, stirring until fully combined. Fold in the walnuts and raisins if using.
  5. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until edges are lightly golden.
  7. Allow the cookies to rest on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
