- 1 cup grated carrots
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1/4 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins or currants (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, grated carrots, honey (or maple syrup), melted coconut oil, and vanilla extract until well blended.
- In a separate bowl, whisk together the baking soda, cinnamon, nutmeg, and salt.
- Gradually incorporate the dry ingredients into the wet mixture, stirring until fully combined. Fold in the walnuts and raisins if using.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Allow the cookies to rest on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
