Ingredients

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 1 cup Ricotta Cheese
  • 1/3 cup Grated Parmesan Cheese
  • 2 cups Fresh Spinach
  • 1/4 cup Fresh Basil
  • 1/4 cup Fresh Parsley
  • 1 teaspoon Garlic Powder
  • To taste Salt
  • To taste Pepper
  • 1 cup Marinara Sauce
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Crushed Red Pepper Flakes
  • As needed Toothpicks or Kitchen Twine

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay each chicken breast between two pieces of plastic wrap and gently pound to about 1/2 inch thickness.
  3. In a mixing bowl, combine ricotta, Parmesan, spinach, basil, parsley, garlic powder, salt, and pepper.
  4. Spread 2 tablespoons of filling on each chicken breast, roll up tightly, and secure with toothpicks or twine.
  5. Heat olive oil in a skillet over medium-high heat and sear the chicken rolls until golden brown, about 3-4 minutes per side.
  6. Transfer to a baking dish, pour marinara sauce over top, and sprinkle with additional Parmesan if desired.
  7. Cover with foil and bake for 20-25 minutes until cooked through and cheese is bubbly.
  8. Let rest for a few minutes before serving.

Notes

For best results, use a meat mallet to flatten chicken evenly. Consider adding a splash of lemon juice for extra flavor in the ricotta filling.
