- 4 pieces Boneless, Skinless Chicken Breasts
- 1 cup Ricotta Cheese
- 1/3 cup Grated Parmesan Cheese
- 2 cups Fresh Spinach
- 1/4 cup Fresh Basil
- 1/4 cup Fresh Parsley
- 1 teaspoon Garlic Powder
- To taste Salt
- To taste Pepper
- 1 cup Marinara Sauce
- 2 tablespoons Olive Oil
- 1/2 teaspoon Crushed Red Pepper Flakes
- As needed Toothpicks or Kitchen Twine
Instructions
- Preheat your oven to 375°F (190°C).
- Lay each chicken breast between two pieces of plastic wrap and gently pound to about 1/2 inch thickness.
- In a mixing bowl, combine ricotta, Parmesan, spinach, basil, parsley, garlic powder, salt, and pepper.
- Spread 2 tablespoons of filling on each chicken breast, roll up tightly, and secure with toothpicks or twine.
- Heat olive oil in a skillet over medium-high heat and sear the chicken rolls until golden brown, about 3-4 minutes per side.
- Transfer to a baking dish, pour marinara sauce over top, and sprinkle with additional Parmesan if desired.
- Cover with foil and bake for 20-25 minutes until cooked through and cheese is bubbly.
- Let rest for a few minutes before serving.
Notes
For best results, use a meat mallet to flatten chicken evenly. Consider adding a splash of lemon juice for extra flavor in the ricotta filling.
