  • 800 g Chicken Breast (cut into halves)
  • 1.5 Tsp Cajun Seasoning Mix
  • 2 Tsp Olive Oil
  • 25 g Grass Fed Butter for Cooking
  • 1 Medium Red Onion (chopped)
  • 45 Garlic Cloves (chopped)
  • ½ Tsp Cajun Seasoning Mix (for rice)
  • Fresh Parsley (for garnish)
  • 15 g Grass Fed Butter (for sauce)
  • ½ Tsp Cajun Seasoning Mix (for sauce)
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan

Instructions

  1. Marinate the chicken pieces with Cajun seasoning mix and olive oil the night before. Store in an airtight glass container.
  2. Heat a pan over medium-high heat and melt 25 g of grass-fed butter. Cook the marinated chicken until crispy and golden (6-7 minutes). Let it rest and then slice.
  3. Sauté chopped red onion and garlic in the same pan until fragrant (2-3 minutes). Add remaining Cajun seasoning and day-old rice, ensuring everything is well-coated.
  4. Add 15 g of butter to the pan, whisk in milk slowly, and incorporate cream cheese and Parmesan until smooth and creamy.
  5. Plate Cajun rice, top with sliced chicken, and drizzle with creamy sauce. Garnish with fresh parsley.

Notes

For optimal flavor, marinate overnight. Use fresh chicken and high-quality butter. Consider Greek yogurt as a lighter alternative to cream cheese.
