- 1.5 Tsp Cajun Seasoning Mix
- 2 Tsp Olive Oil
- 25 g Grass Fed Butter for Cooking
- 1 Medium Red Onion (chopped)
- 4–5 Garlic Cloves (chopped)
- ½ Tsp Cajun Seasoning Mix (for rice)
- Fresh Parsley (for garnish)
- 15 g Grass Fed Butter (for sauce)
- ½ Tsp Cajun Seasoning Mix (for sauce)
- 250 ml Milk
- 150 g Light Cream Cheese
- 40 g Parmesan
Instructions
- Marinate the chicken pieces with Cajun seasoning mix and olive oil the night before. Store in an airtight glass container.
- Heat a pan over medium-high heat and melt 25 g of grass-fed butter. Cook the marinated chicken until crispy and golden (6-7 minutes). Let it rest and then slice.
- Sauté chopped red onion and garlic in the same pan until fragrant (2-3 minutes). Add remaining Cajun seasoning and day-old rice, ensuring everything is well-coated.
- Add 15 g of butter to the pan, whisk in milk slowly, and incorporate cream cheese and Parmesan until smooth and creamy.
- Plate Cajun rice, top with sliced chicken, and drizzle with creamy sauce. Garnish with fresh parsley.
Notes
For optimal flavor, marinate overnight. Use fresh chicken and high-quality butter. Consider Greek yogurt as a lighter alternative to cream cheese.
