Instructions
- Heat olive oil in a large pot over medium heat.
- Add the ground beef, diced onion, and minced garlic; sauté until beef is browned and onions are translucent, about 5-7 minutes.
- Drain excess fat and pour in the beef broth; bring to a gentle boil.
- Stir in cauliflower florets and diced tomatoes; simmer until cauliflower is tender, about 10-12 minutes.
- Reduce heat to low and add heavy cream and shredded cheddar; stir until cheese melts.
- Season with salt, black pepper, and paprika to taste.
- Serve hot, garnished with fresh green onions.
Notes
For a dairy-free version, substitute heavy cream with coconut cream. Add crispy bacon bits or jalapeños for extra flavor.
