Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup diced tomatoes
  • 1 cup cauliflower florets
  • Green onions, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the ground beef, diced onion, and minced garlic; sauté until beef is browned and onions are translucent, about 5-7 minutes.
  3. Drain excess fat and pour in the beef broth; bring to a gentle boil.
  4. Stir in cauliflower florets and diced tomatoes; simmer until cauliflower is tender, about 10-12 minutes.
  5. Reduce heat to low and add heavy cream and shredded cheddar; stir until cheese melts.
  6. Season with salt, black pepper, and paprika to taste.
  7. Serve hot, garnished with fresh green onions.

Notes

For a dairy-free version, substitute heavy cream with coconut cream. Add crispy bacon bits or jalapeños for extra flavor.
