Deliciously chewy keto energy balls made with almond butter, coconut, and seeds for a nutritious snack.

Ingredients

  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup ground flaxseed
  • 1/4 cup sugar-free chocolate chips
  • 1/4 cup chia seeds
  • 2 tablespoons erythritol (or sweetener of choice)
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, combine all the ingredients and stir until well incorporated.
  2. Roll the mixture into small balls, about 1 inch in diameter.
  3. Place the energy balls on a baking sheet lined with parchment paper.
  4. Refrigerate for about 15 minutes until they firm up.
