A creamy and cheesy garlic shrimp dish baked to perfection with a crunchy pork rind topping, perfect for any special occasion.

Ingredients

  • 2 pounds large shrimp (peeled, deveined, tails removed)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 4 tablespoons butter
  • 1/2 cup finely chopped onion
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh basil (chopped, or 1 tablespoon dried)
  • 1/8 teaspoon ground nutmeg
  • 1 cup heavy whipping cream
  • 1 cup grated Parmesan cheese (divided)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup crushed pork rind crumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. In a large skillet over medium-high heat, add olive oil. Season shrimp with salt and pepper, sear for 1-2 minutes on each side, then remove and set aside.
  3. In the same skillet, melt butter and sauté onion until soft (3-4 minutes). Add garlic, basil, and nutmeg, cooking for 30 seconds.
  4. Pour in heavy cream and simmer for 3-4 minutes. Stir in 1/2 cup Parmesan and all Monterey Jack cheese until smooth.
  5. Place seared shrimp in the baking dish and pour creamy sauce over them.
  6. Combine remaining Parmesan with crushed pork rinds and sprinkle on top.
  7. Bake for 25 minutes or until golden and bubbly.

Notes

For extra creaminess, stir in an extra tablespoon of butter at the end of cream sauce preparation.
