- 2 pounds large shrimp (peeled, deveined, tails removed)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- 4 tablespoons butter
- 1/2 cup finely chopped onion
- 4 cloves garlic (minced)
- 2 tablespoons fresh basil (chopped, or 1 tablespoon dried)
- 1/8 teaspoon ground nutmeg
- 1 cup heavy whipping cream
- 1 cup grated Parmesan cheese (divided)
- 1 cup shredded Monterey Jack cheese
- 1/2 cup crushed pork rind crumbs
Instructions
- Preheat your oven to 375°F (190°C) and grease a large baking dish.
- In a large skillet over medium-high heat, add olive oil. Season shrimp with salt and pepper, sear for 1-2 minutes on each side, then remove and set aside.
- In the same skillet, melt butter and sauté onion until soft (3-4 minutes). Add garlic, basil, and nutmeg, cooking for 30 seconds.
- Pour in heavy cream and simmer for 3-4 minutes. Stir in 1/2 cup Parmesan and all Monterey Jack cheese until smooth.
- Place seared shrimp in the baking dish and pour creamy sauce over them.
- Combine remaining Parmesan with crushed pork rinds and sprinkle on top.
- Bake for 25 minutes or until golden and bubbly.
Notes
For extra creaminess, stir in an extra tablespoon of butter at the end of cream sauce preparation.
