- 1 lb ground beef
- 1 cup shredded cheese (Provolone or Cheddar)
- 1 onion, diced
- 1 bell pepper, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Low-carb tortillas or lettuce wraps
Instructions
- In a skillet, heat the olive oil over medium heat until shimmering. Toss in the diced onion and bell pepper, cooking until softened, about 4 minutes.
- Add the ground beef to the skillet. Season with garlic powder, salt, and pepper, cooking until browned.
- Remove from heat and stir in the shredded cheese until melted and gooey.
- Lay tortillas or lettuce wraps flat and spoon the beef and cheese mixture onto the center of each.
- Roll or fold the wraps tightly and serve warm.
Notes
Store leftovers in an airtight container in the fridge for up to three days. For longer storage, freeze unwrapped rolls tightly in plastic wrap for up to a month.
