4 boneless skinless chicken breasts

1 cup bread crumbs

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 cup all-purpose flour

2 large eggs

1/4 cup milk

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Instructions

1. Preheat oven to 375°F. In one dish, mix breadcrumbs, half the Parmesan, Italian seasoning, salt, and pepper. In a second dish, beat the eggs with the milk. Place the flour in a third dish.

2. Dredge each chicken breast in flour, then in the egg mixture, then coat with the breadcrumb mixture.

3. Heat olive oil in a skillet and cook the chicken for 3–4 minutes per side until golden brown. Transfer the seared chicken to a baking dish.

4. In a bowl, mix the remaining Parmesan with the mozzarella and minced garlic. Top each chicken breast with the cheese mixture.

5. Bake for 20–25 minutes or until the chicken is fully cooked and the cheese is melted and bubbly.

Notes

Use Italian-style breadcrumbs for extra flavor.

Add red pepper flakes to the breadcrumb mixture for a spicy kick.
