A comforting meatloaf topped with rich mushroom gravy, combining tender beef with savory herbs for a satisfying meal.

  • Total Time: 75 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 2 pounds fresh ground beef
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 2 cups fresh mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a casserole dish or line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, ketchup, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf and place it in the prepared dish. Bake for 50-60 minutes or until a meat thermometer reads 160°F (71°C).
  4. While the meatloaf is baking, melt butter in a skillet over medium heat. Add mushrooms and cook until golden brown, about 5-7 minutes.
  5. Sprinkle flour over mushrooms and stir for 2 minutes. Gradually whisk in beef broth and cream, stirring until the gravy is velvety, about 5-7 minutes. Season to taste.
  6. Once the meatloaf is done, allow it to rest for a few minutes, then slice and serve with mushroom gravy ladled over each portion.

Notes

Don’t overmix the meatloaf for the best texture. Consider using high-quality beef and fresh mushrooms for optimal flavor.
