Delightful mini strawberry cheesecakes with a buttery graham cracker crust and a creamy filling topped with fresh strawberries.

Ingredients

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/2 cup butter, melted
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, sliced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter; mix until it resembles wet sand.
  3. Press the mixture firmly into the bottom of the mini cheesecake cups.
  4. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Whip the heavy cream until stiff peaks form and gently fold it into the cream cheese mixture.
  6. Spoon the cream cheese mixture over the crusts in mini cheesecake cups.
  7. Chill in the refrigerator for at least 2 hours.
  8. Top each cheesecake with fresh sliced strawberries just before serving.
