Ingredients

  • 3 ripe bananas
  • 2 cups flour
  • 1 cup sugar
  • ½ cup butter (melted)
  • 2 eggs
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract (optional, but recommended)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the sugar and melted butter until well combined.
  4. Beat the eggs in a separate bowl, then add them to the banana mixture.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually fold the dry ingredients into the banana mixture until just combined. Avoid overmixing; a few lumps are perfectly fine!
  7. Pour the batter into a greased loaf pan, smoothing the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For best results, use overripe bananas for the sweetest flavor. Store leftover banana bread wrapped in plastic wrap at room temperature for up to 3 days.
