Instructions
- In a large mixing bowl, combine the rolled oats, peanut butter, honey, protein powder, and vanilla extract. Mix until well blended and holds together.
- If using, stir in mini chocolate chips.
- Roll the mixture into small, bite-sized balls and arrange on a parchment-lined baking sheet.
- Refrigerate for about 30 minutes to firm up the protein balls.
- Enjoy as a quick snack!

Store in an airtight container in the refrigerator for up to a week. Freeze for longer storage, separating with parchment paper.
