Ingredients
1.5 lbs boneless, skinless chicken breasts
1 tsp garlic powder
1 tsp onion powder
½ tsp black pepper
½ tsp salt
2 cups chicken broth
1 cup grated Parmesan cheese
1 package (8 oz) cream cheese, cubed and softened
1 tbsp minced garlic
12 oz pasta (penne, rotini, or your favorite)
½ cup heavy cream or half-and-half
Optional: chopped parsley or extra Parmesan for garnish
Instructions
1. Place the chicken breasts in the crockpot. Season the chicken with garlic powder, onion powder, salt, and black pepper.
2. Add the chicken broth, Parmesan cheese, cream cheese, and minced garlic over the chicken.
3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
4. Once cooked, shred the chicken in the crockpot using two forks and stir to combine it with the creamy sauce.
5. Cook your chosen pasta according to the package directions. Drain the pasta and add it to the crockpot.
6. Pour in the heavy cream or half-and-half and stir everything together until the pasta is well coated and the sauce is creamy.
7. Serve warm, and if desired, top with a sprinkle of extra Parmesan cheese or fresh parsley.
Notes
To maintain the best texture, it’s recommended to cook the pasta separately to avoid it becoming overcooked in the slow cooker.
For a smooth and creamy sauce, add the cream after the slow cooking process is complete to prevent it from separating.
For the most robust flavor, use fresh garlic and freshly grated Parmesan cheese.
Leftovers can be stored in an airtight container for up to 4 days. Reheat gently, adding a splash of broth or cream to restore the sauce’s consistency.
While the dish can be frozen in single portions, be aware that the sauce’s texture may change slightly upon reheating. Stirring it well as it reheats will help bring it back together.
