A warm and comforting Potsticker Soup filled with tender potstickers, aromatic garlic, and ginger, perfect for chilly days.

Ingredients

  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Potstickers (frozen or homemade)
  • 2 cups mixed greens (like spinach or bok choy)
  • 2 green onions, sliced
  • Soy sauce, to taste
  • Sesame oil (optional)
  • Salt and pepper, to taste

Instructions

  1. In a large pot, bring the chicken or vegetable broth to a rapid boil.
  2. Add the minced garlic and grated ginger to the pot and let it cook for about 2 minutes.
  3. Gently add the potstickers to the boiling broth and cook according to package instructions or until heated through.
  4. Stir in the mixed greens and cook until wilted, about 2 minutes.
  5. Season with soy sauce, sesame oil, and salt and pepper to taste.
  6. Serve hot, garnished with sliced green onions.

Notes

This soup is great for leftovers and can be refrigerated for up to 3 days. Freezing is also an option, but mixed greens may change texture when thawed.
