- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1 inch ginger, grated
- Potstickers (frozen or homemade)
- 2 cups mixed greens (like spinach or bok choy)
- 2 green onions, sliced
- Soy sauce, to taste
- Sesame oil (optional)
- Salt and pepper, to taste
Instructions
- In a large pot, bring the chicken or vegetable broth to a rapid boil.
- Add the minced garlic and grated ginger to the pot and let it cook for about 2 minutes.
- Gently add the potstickers to the boiling broth and cook according to package instructions or until heated through.
- Stir in the mixed greens and cook until wilted, about 2 minutes.
- Season with soy sauce, sesame oil, and salt and pepper to taste.
- Serve hot, garnished with sliced green onions.
Notes
This soup is great for leftovers and can be refrigerated for up to 3 days. Freezing is also an option, but mixed greens may change texture when thawed.
