Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup crushed pretzels
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup mustard (yellow or Dijon)
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Set up three bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with crushed pretzels.
  3. Dip each chicken breast into the flour, then the egg wash, and finally roll it in the pretzel crumbs.
  4. Line a baking sheet with parchment paper and place the coated chicken on it.
  5. Spray the tops lightly with olive oil.
  6. Bake in the preheated oven for about 25-30 minutes until cooked through and golden brown.
  7. While baking, combine mustard and cheddar in a small saucepan over low heat, stirring until creamy.
  8. Serve the chicken drizzled with the mustard-cheddar sauce.
