- 4 boneless, skinless chicken breasts
- 1 cup crushed pretzels
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup mustard (yellow or Dijon)
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat your oven to 400°F (200°C).
- Set up three bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with crushed pretzels.
- Dip each chicken breast into the flour, then the egg wash, and finally roll it in the pretzel crumbs.
- Line a baking sheet with parchment paper and place the coated chicken on it.
- Spray the tops lightly with olive oil.
- Bake in the preheated oven for about 25-30 minutes until cooked through and golden brown.
- While baking, combine mustard and cheddar in a small saucepan over low heat, stirring until creamy.
- Serve the chicken drizzled with the mustard-cheddar sauce.
