- 2 tablespoons honey

- 1 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel the sweet potatoes and slice them into rounds about 1/2-inch thick.
- Arrange the rounds on the prepared baking sheet in a single layer, giving them enough space to roast properly.
- Drizzle the rounds with olive oil, then sprinkle with salt, black pepper, and cinnamon if you’re using it.
- Roast in the oven for 20-25 minutes, flipping the rounds halfway through until they are golden and tender.
- Once roasted, transfer to a serving platter and drizzle with honey.
- Finish by sprinkling crumbled feta and the chopped fresh parsley on top.
- Serve immediately while warm for the best flavor experience.
Notes
For the best flavor, use high-quality olive oil and fresh herbs. If you’re out of feta, crumbled goat cheese can be a great substitute.
