  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 tablespoons honey
  • 1/3 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into rounds about 1/2-inch thick.
  3. Arrange the rounds on the prepared baking sheet in a single layer, giving them enough space to roast properly.
  4. Drizzle the rounds with olive oil, then sprinkle with salt, black pepper, and cinnamon if you’re using it.
  5. Roast in the oven for 20-25 minutes, flipping the rounds halfway through until they are golden and tender.
  6. Once roasted, transfer to a serving platter and drizzle with honey.
  7. Finish by sprinkling crumbled feta and the chopped fresh parsley on top.
  8. Serve immediately while warm for the best flavor experience.

Notes

For the best flavor, use high-quality olive oil and fresh herbs. If you’re out of feta, crumbled goat cheese can be a great substitute.
