- 1/2 cup breadcrumbs

- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 tablespoons cornstarch mixed with 2 tablespoons water
- 2 lbs potatoes, peeled and chopped
- 4 cloves garlic, minced
- 1/2 cup milk
- 4 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground beef, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and dried thyme. Mix gently.
- Shape mixture into 1-inch balls and place on a baking sheet. Bake for about 20 minutes until browned and cooked through.
- While the meatballs bake, heat olive oil in a skillet over medium heat. Add sliced onion and minced garlic, sauté until translucent.
- Stir in beef broth and Worcestershire sauce, bring to simmer. Gradually whisk in cornstarch slurry until mixture thickens.
- For the mashed potatoes, cover chopped potatoes and minced garlic with cold water. Boil until fork-tender, then drain and mash with milk and butter.
- Fold in salt, black pepper, and parsley to mashed potatoes.
- Add cooked meatballs to gravy, toss to coat, and serve over garlic herb mashed potatoes with extra gravy.
