Ingredients

  • 2 medium zucchinis, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: sesame seeds and green onions for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the sliced chicken breasts and cook until browned and cooked through, about 5-7 minutes, stirring occasionally.
  3. Toss in the minced garlic and stir for about 30 seconds until fragrant.
  4. Add the sliced zucchinis and pour in the soy sauce. Stir-fry for another 3-5 minutes until the zucchini is tender but still crisp.
  5. Season with salt and pepper to taste, and give it one last stir. Serve hot, garnished with sesame seeds and green onions if desired.
