- 4 medium sweet potatoes, scrubbed and pierced
- 1 lb lean ground beef (or turkey/chicken)
- ½ cup tomato sauce
- 2 Tbsp low sugar ketchup
- 1 Tbsp mustard
- 1 Tbsp Worcestershire sauce
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt & pepper, to taste
- ½ cup shredded cheddar or mozzarella (optional)
- Olive oil spray, for roasting
Instructions
- Preheat your oven to 400°F (200°C). Place the scrubbed and pierced sweet potatoes directly on the oven rack and bake for 40–45 minutes, or until soft.
- While the sweet potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook for about 5–7 minutes until browned. Drain excess fat if necessary.
- Stir in the tomato sauce, ketchup, mustard, Worcestershire sauce, garlic powder, smoked paprika, and season with salt and pepper. Let the mixture simmer for about 5–10 minutes until thickened.
- Slice open each baked potato lengthwise, fluff the insides with a fork, and spoon the sloppy joe mixture on top.
- If using cheese, sprinkle it over the filling and let it melt under the broiler for about 1 minute for a golden finish.
Notes
Consider garnishing with sliced green onions or fresh parsley. Leftovers can be stored in an airtight container for up to 3 days.
